Ingredients

Serves : 3
  • Quinoa 1cup uncooked quinoa (makes 2cups cooked quinoa.)


  • Water to cook quinoa. 2cup


  • Pizza sauce. 400gms


  • Grated zucchini 1medium size


  • Grated mozzarella cheese 2cup


  • Black olives sliced. 4Tbsp


  • Cherry tomatoes sliced. 4Tbsp


  • Dried Oregano 1 Tsp


  • Salt as per taste

Directions

  • Wash quinoa properly and add in a sauce pan .
  • Add 2 cups of water cover with lid and cook quinoa on low heat for 15 minutes.
  • Preheat the oven to 200*C for 10 minutes.
  • Transfer the cooked quinoa into a large mixing bowl and add 1/2 cup pasta sauce, oregano and salt.
  • Grease ramekins with olive oil.
  • Add layer of quinoa into each ramekin.
  • Add grated zucchini,pasta sauce, grated cheese.
  • Repeat the layers until no more quino is left.
  • Add more cheese on top layer add olives and Cherry tomatoes.
  • Sprinkle some grated cheese on top of toppings.
  • Bake for 20 minutes or until the cheese is fully melted.
