Wash quinoa properly and add in a sauce pan .
Add 2 cups of water cover with lid and cook quinoa on low heat for 15 minutes.
Preheat the oven to 200*C for 10 minutes.
Transfer the cooked quinoa into a large mixing bowl and add 1/2 cup pasta sauce, oregano and salt.
Grease ramekins with olive oil.
Add layer of quinoa into each ramekin.
Add grated zucchini,pasta sauce, grated cheese.
Repeat the layers until no more quino is left.
Add more cheese on top layer add olives and Cherry tomatoes.
Sprinkle some grated cheese on top of toppings.
Bake for 20 minutes or until the cheese is fully melted.
